Mashed Poturnipoes: Mashed Potatoes and Turnips

Not too long ago we received some turnips at our local Feeding America food bank. Neither Jared nor I have ever had turnips (at least as far as we can remember). Consequently, we didn’t know what to do with them. After surfing the web and not finding any recipes that jumped out at me, I decided to make mashed potatoes and add in the turnips to cut back on the amount of pure starch and add some extra vitamins in. Here’s what we did:

Ingredients:
Two turnips
One pouch of instant mashed potatoes, flavor of your choice (we used sour cream and chive potatoes)

1. Wash, peel, and cube the turnips and then boil them until tender, about 15 minutes.
2. Add some butter to the turnips and mash them.
3. Prepare the pouch of instant potatoes according to the directions on the box.
4. Mix the mashed potatoes and the mashed turnips together.

Voila! You have mashed poturnipoes!

And the verdict? Absolutely delicious. The turnips added a somewhat coconuty texture to the potatoes, but it wasn’t too weird and the flavors were excellent. It ended up with a mild sweetness and an over all richness that I’ve never had in potatoes before. Definitely something I plan to repeat in the future.
